Step 1
Add the coconut milk and half the amount of water (e.g., 200 ml coconut milk + 100 ml water) to a saucepan. Bring just to a simmer, then remove from heat.

Sprinkle in the chia seeds and whisk until mixture thickens. (The chia seeds will expand as they absorb the liquid.)
Step 3
Transfer the pudding to small bowls or glasses and refrigerate for 15 minutes or until it sets.
Step 4
Meanwhile, cut the passion fruit in half and scoop out the pulp with a spoon.
Step 5
Top the pudding with the passion fruit pulp, maple syrup and a sprinkle of shredded coconut (optional). It's ready!
