Step 1
To make the sauce: Mix the juice of the lime, the peanut butter, and the soy sauce together in a small bowl.

Optional: Add 1 teaspoon of sugar per portion.

Mix with a whisk or fork until the peanut butter has dissolved.

Cook the rice noodles according to the package instructions.

Meanwhile, heat a drizzle of oil in a pan over medium heat. Add the minced or grated garlic.

Add the cooked shrimp and sauté for 2 to 3 minutes over medium heat.
Step 7
When the rice noodles are done, drain them and add them to the pan, together with the sauce.
Step 8
Turn the heat to low and stir.
Step 9
Add the bean sprouts and sauté for another 1 to 2 minutes.
Step 10
Serve, topped with a few fresh cilantro leaves and some crushed peanuts — it's ready!
