Step 1
Separate the egg whites from the yolks.
Step 2
Place the egg yolks in a mixing bowl and add half the sugar. Whisk until the mixture turns white.
Step 3
Add the mascarpone and orange zest. Whisk until smooth and homogeneous.
Step 4
Add the whites to a salad bowl with a pinch of salt. Beat the egg whites until stiff. Add the other half of the sugar and whisk again.
Step 5
Incorporate the egg whites delicately and in several batches into the mascarpone preparation.
Step 6
Cut the ends of the oranges. Then cut the flesh all around, cutting them raw, then cut the oranges into slices.
Step 7
Prepare the coffee (350ml for 8 portions) and pour it into a hollow container so that it cools. Dip the biscuits in it on each side.
Step 8
Place a first layer of biscuits in the bottom of a high dish (20x25cm). You can also serve your tiramisu in glasses/ramekins or bowls.
Step 9
Spread a layer of mascarpone cream over the biscuits. Then add half of the orange slices. Cover with a second layer of biscuits, mascarpone and finish with the orange slices.
Step 10
Cover the tiramisu and refrigerate for at least 4 hours. The ideal is to do it the day before for the next day.
Step 11
Take out the tiramisu just before serving and decorate it with orange zest. It's ready !
