Shallot

Step 1

Peel then finely chop the shallot.

Step 2

In a large saucepan or Dutch oven, melt one knob of butter per serving. Add the shallot & cook for 2-3 minutes over medium heat, stirring.

Pasta (rigatoni)
Pasta sauce (arrabbiata)
Chicken bouillon (cube)

Step 3

Add the pasta, arrabbiata sauce, chicken stock (250ml d'eau / pers) & pepper. Mix & bring to a boil. Reduce the heat, then cover and simmer for 10-12 minutes, over low heat, checking for cooking. If necessary, add water.

Crème fraîche
Peas (frozen)
Parmesan

Step 4

Once the pasta is cooked, add the heavy cream, peas and grated parmesan. Mix until the sauce is smooth & creamy.

Step 5

Serve the pasta with grated parmesan on top. Re-season to taste & enjoy !
