Step 1
In a bowl, mix the chicken stock with hot water (about 5 ounces per person).
Step 2
In a skillet over high heat, add a drizzle of olive oil and brown the chicken for about 3 minutes on each side. Add salt and pepper. Remove the chicken from the skillet and set aside, then lower the heat to medium.
Step 3
In the same skillet, add the garlic, tomato paste, rice, and chicken stock and mix well.
Step 4
Add the chicken over the top, cover, and let cook for 25 minutes over low-medium heat.
Step 5
Once it's all cooked, add fresh parsley if desired. Enjoy!
