Leeks

Step 1

Cut off the green tops of the leeks*. Then, finely slice the white part and rinse well in a colander. *Check out our tips for this step

Add a dab of butter to a pan on medium heat. Add the leeks, salt & pepper and cook for 5 minutes, stirring frequently. Turn the heat down to low, cover the pan, and cook for 10 minutes.

Egg

Step 3

While the leeks are cooking, boil a small pot of water to make the soft-boiled eggs. Once boiling, put the eggs in the pot and cook for 6 minutes. Next, place them in a bowl of cold water and peel.

Whole grain mustard

Step 4

Once the leeks have cooked for 10 minutes, add the mustard into the pan. Mix well and cook for 2 more minutes.

Egg

Step 5

Serve the leeks with an egg on top, sliced in half. Season with salt & pepper and enjoy!
