Step 1

Wash and slice the mushrooms.

Optional: chop some shallots if you have any.

Add a drizzle of olive oil to a pan on high heat and cook the mushrooms (and shallots) for 5 minutes, stirring frequently.

In the meantime, scramble the eggs with salt & pepper in a bowl.

Once the mushrooms are golden brown, add the scrambled eggs and the compté (chopped in small pieces or grated) to the pan.

Let it cook for 1-2 minutes on medium heat while breaking the bottom with a spatula to facilitate the cooking.

Fold the omelet in half once the bottom is golden.

Salad (lamb's lettuce-arugula mix)

Step 8

Serve the omelet with a salad seasoned to your liking. Enjoy!
