Stovetop, Frying pan
Step 1
Wash & slice the potatoes into thick rounds.
Step 2
In a container, combine : 60 ml of water per serving, 1 teaspoon of olive oil per serving & the smoked paprika.
Step 3
Heat a drizzle of olive oil in a pan, over medium heat. Add the potatoes & the olive oil / paprika mix. Bring to a boil. Cover & leave to simmer for 15 min, over low heat.
Step 4
Meanwhile, peel & finely mince the onions.
Step 5
Peel & finely mince the garlic.
Step 6
Wash & slice the mushrooms.
Step 7
Add the grated garlic, onions & mushrooms to the pan with the potatoes. Stir & continue cooking for another 6-7 min. If the potatoes stick to the bottom of the pan, add a drizzle of olive oil.
Step 8
Make holes in the mix & delicately crack the eggs in. Season them with salt & pepper. Cover & leave to cook for 5 min, over low heat.
Step 9
Once the eggs are cooked to your liking, top with minced parsley & enjoy !
For a truly flavoursome dish, we suggest seasoning the potatoes with some 'piment d'Espelette' or Cayenne pepper.
