Step 1
If using, peel & finely mince the shallots.
Step 2
Wash & slice the mushrooms into thin slices.
Step 3
Melt a dab of butter in a pan, over high heat. Add the shallots & sauté for 2-3 min, stirring.
Step 4
Add the mushrooms to the pan & continue cooking for another 5-6 min, until all the liquid from the mushrooms has evaporated. Season with salt & pepper. Remove from the heat & set aside.
Step 5
In the same pan, melt another dab of butter. Add the buckwheat galette.
Step 6
Crack the egg delicately onto the galette & sprinkle over with grated cheese. Add the ham torn into pieces, followed by the sautéed mushrooms.
Step 7
Cook for 3 min, over medium heat, then fold the edges of the galette into the center of the pan & enjoy !
