Step 1
Wash & slice the mushrooms.
Step 2
Peel & thinly slice the onions.
Step 3
Heat a drizzle of olive oil in a pan, over medium heat. Add the onions & grated garlic. Sauté for 30 sec, stirring.
Step 4
Reduce the heat to medium & add the mushrooms. Season with salt & pepper. Cook for 10-12 min, stirring.
Step 5
Meanwhile, heat a drizzle of olive oil in a pot, over medium heat. Add the drained & rinsed beans. Season with salt, pepper & ground cumin. Cook for 2-3 min, stirring.
Step 6
Remove from the heat & blend, using a stick blender, until smooth. Add a splash of water to rectify the texture, if needed.* Continue heating up the white bean mash for another 3-4 min, over medium heat. *Check out our tips for this step
Step 7
Add the crème fraîche into the pan with the mushroom. Leave to cook for another 1-2 min, stirring.
Step 8
Serve the white bean mash in a plate with the creamy mushroom. Top with fresh parsley, if you have some & re-season to taste. Enjoy !
For a truly flavoursome dish, we suggest adding some grated gruyère cheese to the bean mash & seasoning the mushroom with 'herbes de Provence'.
