Step 1
Preheat the oven to 220°C. Rinse the mirabelles then cut them in half to remove the pit.
Step 2
Add the softened butter and sugar* to a large bowl, mix until creamy. Add the eggs, a pinch of salt and mix. *Check out our tips for this step
Step 3
You can replace 1/4 of the flour with almond meal, for added flavor and moisture. Add to the batter and mix.
Step 4
Place half of the mirabelles in the bottom of the dish (we used a 23 cm diameter dish here), pour in the batter and add in the rest of the mirabelles. Sprinkle with one teaspoon of sugar.
Step 5
Bake for 10 minutes at 220°C, then lower to 180°C and cook for another 30 minutes.
Step 6
Insert a knife to make sure it is cooked through. Wait at least 10 minutes before serving (It's even better the following day!). Enjoy!
If you wish to reduce sugar quantities, you can remove up to ⅓ of the sugar in this recipe without altering flavor.
