Step 1

Cook the rice according to the package instructions.

Chicken breast

Cut the chicken into bite-size chunks.

Heat a drizzle of oil in a pan over medium heat. Add the chicken, season with salt and pepper and brown for 2 minutes.

Curry powder

When the chicken is browned, add the curry powder. (Optional: For spicier curry, add a pinch or two of Cayenne pepper.) Sauté for another 3 minutes.

Coconut milk

Step 5

Add the coconut milk and 1/4 cup water per portion. Cover and simmer for 5 minutes.

Cilantro (fresh)

Step 6

Adjust seasoning with salt and pepper and serve with the rice. (Optional: Top with fresh cilantro.)
