Step 1

Preheat the oven to 240°C. Wash the veggies and quarter the tomatoes.

Zucchini

Step 2

Thinly slice the zucchini in half-moons.

Red onion

Step 3

Remove the skin and quarter the onions.

Rosemary (dried)

Step 4

Add the vegetables to an oven-safe dish with salt, pepper, herbs and olive oil. Mix to combine.

Feta cheese (block)

Step 5

Place the feta on top and add another drizzle of olive oil, salt and pepper.

Step 6

Bake at 240°C until the feta is golden. (about 20 minutes)

Step 7

Serve hot with a salad or bread. It's as simple as that!
