Pan-grilled steak with a cool yogurt sauce, wrapped in a tortilla...so easy, so good!
Make sure you have...
Stovetop
Step 1
In a shallow container, add the steak, paprika, 1/2 tsp olive oil per portion and salt and pepper to taste. Massage marinade into beef and let sit for 5 minutes.
Step 2
Meanwhile, thinly slice the cucumber and red onion.
Step 3
In a small bowl, mix the yogurt with salt, pepper and a drizzle of olive oil. Set aside.
Step 4
In a pan over medium-high heat, brown the steak for 2 minutes on each side (for rare doneness).
Step 5
Let the steak rest off-heat for 1 minute, then cut into slices against the grain.
Step 6
Place the tortilla on a plate and top with the yogurt, cucumber, beef and red onion. (Optional: First heat the tortilla for a few seconds in a pan or microwave.)
Step 7
Season with salt and pepper. Top with a drizzle of olive oil and a few fresh mint leaves (optional).
