Step 1
Slit the skin of the sausages, remove the meat and shape it between your hands to make 3 cm balls.
Step 2
In a hot skillet, add the meatballs and cook over medium heat for 5 minutes, stirring regularly.
Step 3
Add 2 tablespoons of water per person, cover and cook on a very low heat for the rest of the recipe.
Step 4
Meanwhile, in a pot of boiling water, cook the pasta according to pack instructions. Drain them, setting aside 50ml of water per person of cooking water.
Step 5
In a bowl, beat the eggs then add the 50ml of cooking water per person and the Parmesan cheese.
Step 6
Once the meatballs are well browned, turn off the heat, add the strained pasta to the pan and the sauce. Stir well. (Optional: add the chopped parsley). Serve, season with salt and pepper.
