Pasta (linguine)

Step 1

In a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, drain the pasta. Set aside & keep warm.

Sun-dried tomatoes

Step 2

Meanwhile, if needed drain & small dice the sun-dried tomatoes.

Chicken breast

Step 3

Butterfly the chicken breasts by slicing in half through the center, creating two equal portions. Season all over with salt & pepper.

Step 4

Melt a dab of butter in a pan, over medium-high heat. Add the chicken to the pan. Sear, undisturbed for 2-3 min on each side. Set aside.

Tomato paste
Chicken bouillon (cube)

Step 5

In the same pan, over medium-low heat, stir in the tomato paste. Pour the chicken broth (50 ml per person) to deglaze the bottom of the pan, scraping up any seared bits.

Heavy cream
Parmesan (grated)
Oregano (dried)
Garlic powder

Step 6

Stir in the crème fraîche & grated parmesan until combined. Add the sun-dried tomatoes, dried oregano & garlic powder . Mix it all together. Optional: add some crushed chilli pepper for an extra kick.

Step 7

Add the seared chicken back to the pan. Simmer the chicken & sauce for 2-3 min, over low heat, spooning the sauces over the chicken.

Basil (fresh)

Step 8

Serve the creamy tomato chicken over the cooked linguine. Garnish with a bit more parmesan & fresh basil, if you have some. Enjoy !
