Step 1

Mince the onions.

Carrots (fresh)

Peel and chop the carrots and onions.

Add them in a pan, with the garlic.

Cook them for 2 minutes.

Curry powder

Step 5

When the mixture is golden, add the curry and leave to cook for 2 more minutes.

Red lentils (dry)

Step 6

Add the lentils and double their volume of water. Cover and leave to simmer 10-12 mins on on a low heat.

White rice (long grain)

Step 7

Cook the rice following the cooking time as recommended on the packaging.

Tomato sauce
Coconut milk

Step 8

Add the tomato pulp & coconut milk. Season with salt & pepper to taste. Stir well.

Step 9

Arrange and serve!
