Step 1

Rinse the lentils. In a pot, bring 1/2 cup of water per person to a boil. Add salt and the lentils and cook, covered, for 20 minutes.

Roasted bell peppers

If necessary, remove the seeds from the peppers and cut into thin strips.

Step 3

Once the lentils are cooked, add the peppers, the coconut milk and curry. Season with salt & pepper, cover and cook for 5 more minutes.
