Step 1

Rinse the lentils with cold water and strain.

Avocado
Cucumber

Step 2

Chop the avocado and cucumber in cubes.

Goat's cheese
Apple cider vinegar
Mint (fresh)
Avocado
Cucumber
Arugula

Step 3

In a salad bowl, add the lentils, vinegar, 1 tbsp olive oil per person, avocado, cucumber, (optional: chopped mint), arugula, and fresh goat cheese. Season with salt & pepper, mix well and serve. Enjoy!
