A simple & tasty recipe that you will quickly add to your rotation!
Oven
Step 1
Preheat the oven to 200°C. Peel & slice the red onions into quarters.
Step 2
Prepare the marinade. In a bowl, combine : 1 tablespoon of olive oil per person, grated garlic & lemon juice. Season with salt, pepper & thyme, if you have some.
Step 3
On baking tray lined with parchment paper, add the potatoes, chicken & onion. Season with salt, pepper & a drizzle of olive oil. Roast for 35-40 min at 200°C.
Step 4
Remove the tray from the oven & add the olive. Return to the oven for another 5 min at 200°C.
Step 5
Remove the tray from the oven & top with a few slices of lemon & some fresh parsley, if you have some. Serve with a side of green salad or some grilled seasonal veggies & enjoy !
