Step 1

Preheat the oven to 180°C. Zest & juice the lemons into a bowl.

Butter (unsalted)
Sugar (granulated)

Step 2

In a large bowl, add : the softened butter, sugar (50g for a batch of 12 shortbreads) & a pinch of salt. Mix well to combine.

Flour (all-purpose)

Step 3

Mix in the flour (125g for a batch of 12 shortbreads), until a dough starts to form.

Step 4

In a rectangular baking dish, press the dough in an even layer. Bake the biscuit base for 10-12 min at 180°C, or until the edges are lightly browned.

Step 5

Meanwhile, in a large bowl, add : the eggs, the remaining sugar (190g for a batch of 12 shortbreads), lemon juice & zest & a pinch of salt. Whisk it all together.

Flour (all-purpose)

Step 6

Add the remaining flour (55g for a batch of 12 shortbreads) & whisk until well combined.

Step 7

Once lightly golden, remove the biscuit from the oven. Pour in the lemon filling & bake for another 20-25 min at 180°C.

Step 8

Remove the lemon bars from the oven & leave to cool-down for 1 hour before slicing. Top with powdered sugar, if you wish & enjoy !
