Step 1

Preheat the oven to 180°C/350°F. In a bowl, cream together the softened butter (you can soften it in the microwave for 15 seconds) and sugar until fluffy.

Add the eggs, a pinch of salt, the zest of a lemon, and the crème fraîche, and mix.

Step 3

In a separate bowl, mix together the flour and baking powder, then gradually fold the dry ingredients into the wet ingredients.

Step 4

Add the juice of 1/2 lemon (optional: add 2 tablespoons of poppy seeds) and stir until you have a smooth and creamy mixture.

Grease a loaf tin and pour in the batter. Bake for 50 minutes. When the cake is done, remove it from the oven and let cool before serving.

Tip: You can make a glaze by mixing 100g of powdered sugar and the juice of 1/2 lemon to make a smooth mixture. Drizzle it on top of the cake, adding some extra zest or poppy seeds to decorate.
