Easy, fast, healthy! Cooking "en papillote" ticks all the boxes!
Make sure you have...
Oven, Pot (small), Stovetop, Parchment paper
Step 1
Preheat the oven to 200°C. Slice the lemons into rounds.
Step 2
On a sheet of parchment paper, add the chicken breast. Pour the white wine & a drizzle of olive oil on top. Season with salt, pepper & dried rosemary.
Step 3
Top the chicken with the lemon rounds & seal the 'papillote' to form a parcel. Roast in the oven for 20 min at 200°C.
Step 4
Meanwhile, wash & slice the potatoes in half lengthwise.
Step 5
In a pot of salted boiling water, add the potatoes. Cook for 15 minutes. Once cooked through, drain the potatoes.
Step 6
Once cooked through, remove the chicken from the oven & serve with the new potatoes. Top with a drizzle of olive oil & some rosemary. Enjoy !
Steam your potatoes before roasting, for more tender veg.
