White rice (long grain)

Step 1

Cook the rice according to package instructions. Once cooked through, drain the rice & set aside.

Green beans (frozen)

Step 2

In another pot of salted, boiling water, cook the green beans for 3 min. Drain & set aside.

Butter (unsalted)
Lemon

Step 3

Meanwhile, heat a few dabs of butter in a pan over low heat. Juice & zest the lemon into the pan. Season with salt & pepper and leave to melt over low heat for about 1-2 min.

Cod (fresh)

Step 4

In the same pan, add the cod & cook for 2-3 min on each side. Spoon the pan sauce over top as it cooks.

Parsley (fresh)

Step 5

On a plate, arrange the cod with the rice & green beans. Drizzle lemon butter on top & sprinkle with parsley if you have any (optional). Add lemon wedges if you have any left. It's ready!
