Stovetop, Frying pan, Colander
Step 1
Trim the ends of the leeks, then cut them into thin strips. Place in a colander & was thoroughly.
Step 2
Wash & slice the mushrooms into thin strips.
Step 3
Heat a drizzle of olive oil in a pan, on medium heat. Add the mushrooms & leeks. Sautée for 5-6 min, stirring frequently.
Step 4
Once golden, turn the heat off & add the crumbled feta cheese. Stir to combine & season to taste.
Step 5
Carefully remove the phyllo sheet from it paper backing. Take one sheet of phyllo sheets & lightly oil it.
Step 6
Divide the filling in order to have enough for each spring roll: 3 per person. Add a bit of filling to one side of the phyllo sheet.
Step 7
Roll the sheet of dough over 1/3 of the surface, then fold the two edges inwards. Continue rolling the phyllo sheet a little tightly.
Step 8
Repeat as many times as necessary.
Step 9
Heat a little drizzle of olive oil in a pan, on medium heat. Add the spring rolls & cook for 2 min on each side. Alternatively, you can also cook them in the oven for 10 min at 180°C.
Step 10
Once golden & crisp, serve them with a green salad seasoned to your liking. Enjoy !
For a truly flavoursome dish, we suggest adding garlic, curry ou chilli powder & serving the spring rolls with a side of yogurt sauce to dip in.
