Leeks

Step 1

Remove the ends of the leeks and then slice the white part in rings. Place them in a colander and rinse thoroughly to remove any dirt.

Step 2

In a frying pan, add the leeks with a knob of butter and cook over high heat for 5 minutes, stirring continuously.

Crème fraîche

Step 3

Lower the heat, season with salt and pepper and cook for 5 minutes more, covered. Then add the crème fraîche.

Remove the leeks from the pan, setting them to one side.

Smoked salmon

Step 5

Add a knob of butter and cook the galette. Add some of the melted leeks on top, spreading them out and lay on the smoked salmon.

Step 6

Close the galette and simmer for 2 to 3 minutes over low heat. Serve and enjoy!
