Step 1

Drain the chickpeas (save a little water, about 2 tablespoons per person). Peel the garlic and remove the germ.

Step 2

In the blender add: chickpeas, garlic, half of the lemon juice, (tahini if you have any), cumin, salt, and a drizzle of olive oil. Blend for 1 min / speed 7 until smooth, add a little water if necessary.

Cucumber
Balsamic vinegar
Parsley (fresh)

Step 3

Meanwhile, finely chop the shallot and parsley. Quarter the tomatoes and the cucumber into cubes. In a salad bowl mix: tomatoes, cucumber, shallots, parsley, vinegar, 1 tablespoon of olive oil/person, salt and pepper.

Step 4

Prepare the plates by spreading the hummus in the bottom. Add the salad, a little parsley for decoration, a drizzle of olive oil, pepper, (optional: add sesame seeds if you have some).
