Step 1
Preheat your oven to 200°C. Cut off the tops of the peppers, remove the seeds, and cut into cubes.
Step 2
Cut the onions in quarters and thinly slice the garlic. Leave the potatoes whole or cut in half in large.

Thinly slice the garlic.
Step 4
Cut the sausages in thirds and prick holes in them with a fork.
Step 5
Add all the ingredients* to an ovenproof dish. Season with salt, pepper, herbs and a drizzle of olive oil. Mix well and bake for 30 minutes at 200°C. *Check out our tips for this step
Step 6
Season with salt and pepper and add a drizzle of olive oil and some aromatic herbs. Mix well and bake for 30 minutes at 200°C.
Step 7
After 30 minutes, remove the dish from the oven and add the white wine. Make sure the sausages are on the top of the dish so that they are not sitting in the juice.
Step 8
Bake for another 15 minutes.
Step 9
Serve hot and enjoy!
Steam your potatoes before roasting, for more tender veg.
