Fingerling potatoes

Step 1

In a pot of salted boiling water, cook the potatoes for 20 min. Once cooked through, drain the potatoes & set aside to cool.

Cherry tomatoes

Step 2

Wash, the cut the cherry tomatoes in half. Add them to a bowl with the potatoes.

Capers
Black olives (pitted)
Anchovies

Step 3

Add the capers, black olives & anchovies - To reduce their saltiness, rinse them under cold water. Season with a drizzle of olive oil, vinegar, if you have some & pepper. Mix well.

Step 4

Serve the Italian potato salad on a plate & enjoy !
