Step 1
In a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, set a small ladle of cooking water aside & drain the pasta.
Step 2
Meanwhile, heat a drizzle of olive oil in a pan, over low heat. Add the grated garlic & tomato paste. Sauté for 30 sec while stirring.
Step 3
Add the cherry tomatoes & cook for 2 min, over medium heat. Add the olives & enough water to cover the bottom of the pan. Stir.
Step 4
Add the cod. Season with herbes de Provence, salt & pepper. Cook 2-3 min on each side.
Step 5
Serve the tomato & olive cod on a bed of tagliatelle. Drizzle with the cooking juices & top with fresh basil, if you have some. Enjoy !
