Fingerling potatoes

Step 1

Wash & slice the potatoes into thick rounds.

Smoked paprika

Step 2

In a hot pan, add 50ml of water per person, half a tablespoon of olive oil per person, the smoked paprika & a pinch of salt. Stir to combine.

Add the potatoes & stir to coat. Bring to a boil, cover & leave to simmer for 15 min.

Chorizo (cured)

Step 4

Meanwhile, slice the chorizo into rounds.

Peel & finely mince the onions.

Step 6

After 15 min, add the onions, chorizo, A& grated garlic to the pan. If the potatoes are sticking to the pan, add a drizzle of olive oil. Stir & continue cooking for another 5-6 min.

Egg

Step 7

Make small wells (1 per person) in the potatoes & delicately crack the eggs in them. Season with salt & pepper. Cover & leave to gently cook for 5 min, over low heat.

Step 8

Serve the huevos rotos with some fresh herbs & a side of green salad. Enjoy !
