Oven, Peeler, Parchment paper, Stovetop, Pot (small), Colander

Carrots (fresh)

Step 1

Preheat the oven to 180°C. Wash, peel & cut the carrots in half lengthwise. Steam the carrots for 5 min.

Cumin (ground)
Honey

Step 2

Place the steamed carrots onto a baking tray covered with parchment paper. Season with salt, pepper, cumin & a drizzle of olive oil & honey.

Step 3

Roast in the oven for 25-30 mins at 180°C.

Mixed grains

Step 4

Meanwhile, cook the grain mix according to package instructions. Once cooked through, drain the grain mix.

Feta cheese (block)
Mint (fresh)

Step 5

Serve the grain mix with the honey-roasted carrots. Top with crumbled feta & fresh min, if you have some. Re-season to taste & enjoy !
