Sweet potato

Step 1

Preheat the oven to 200°C. Peel the sweet potatoes, then cut them into small cubes.

Zucchini

Step 2

Wash then cut the zucchini in half lengthwise, then into half moons.

Red onion

Step 3

Peel then cut the red onion into quarters.

Step 4

On a baking sheet covered with baking paper, add the sweet potatoes, zucchini and red onion. Add a pinch of thyme if you have it. Salt, pepper and drizzle with a good drizzle of olive oil. Mix everything. Bake for 35 to 40 minutes at 200°C.

Dijon mustard

Step 5

Meanwhile, in a container, mix 1 tablespoon of olive oil per person, the whole-grain mustard and the honey. Add salt and pepper.

Chicken breast

Step 6

Heat a drizzle of olive oil in a pan over medium heat. Add the chicken & season with salt & pepper. Brush the top-facing side of the chicken with the honey/mustard sauce. Cook undisturbed 5-6 min on one side. Flip the chicken over & brush with the remaining sauce. Continue cooking for another 3-4 min.

Step 7

Remove the vegetables from the oven and serve them with the chicken. Season to taste. It's ready !
