Step 1

Dice the peppers, eggplant, zucchini, and tomatoes.

Peel the onion and garlic and then finely mince.

In a dutch oven or pot, add a drizzle of olive oil, then sauté the onion and eggplant for 3 minutes over high heat.

Step 4

Next add the peppers and let cook for 2 minutes over high heat. Then add the zucchini, tomatoes, garlic, and the thyme, parsley, and bay leaves.

Step 5

Cover and let simmer 5 minutes. Then uncover and let cook over medium heat for 15-20 minutes.

Step 6

Serve your ratatouille over a meat, fish, or grain, or enjoy it by itself!
