Stovetop, Frying pan, Pot (small)
Step 1
Peel & dice the potatoes.
Step 2
In a pot of cold water, add the potatoes. Bring to a boil, then leave to cook for 15 min, over medium heat.
Step 3
Meanwhile, chop off the ends of the leeks.* Finely slice the leeks & rinse them in a colander to remove all impurities. *Check out our tips for this recipe
Step 4
Melt a dab of butter in a pan, over medium heat. Add the leeks & season them with salt & pepper. Sauté for 2-3 min stirring. Cover & cook for another 8-10 min, over low heat.
Step 5
Once the leeks are lightly golden, add the drained sweet corn. Continue cooking for another 2-3 min while stirring, over medium heat. Keep warm.
Step 6
Once cooked through, drain the potatoes. Using a fork or potato masher, mash the potatoes. Pour the milk in little by little while stirring. Add the butter & season with salt & pepper. Mix until the butter is fully melted & incorporated.
Step 7
Serve the mashed potatoes in a plate with the grilled veggies. Re-season to taste & enjoy !
For a zero-waste dish, use the discarded leek stalks to make soup ! Rinse well & remove all damaged, dry & yellow parts before adding to your pot with the ingredients of your choosing.
