Potato

Step 1

Peel and chop the potato into cubes. Add them to a microwaveable dish with a bit of water. Cover with plastic wrap and mircowave for 5 minutes on the highest setting.

Leeks

Step 2

Meanwhile, wash and finely chop the leeks.* Cook in a frying pan with a drizzle of olive oil, for 2-3 minutes until they are lightly golden. Add a bit of water and leave it to evaporate. *Check out our tips for this recipe

Step 3

Once all the water has evaporated, add the strained corn and cook for 2-3 mintues until they are golden.

Potato

Step 4

Take the potato out of the microwave, which should be soft (put them back in for 2 more minutes if they're not). Mash the potatoes using a fork, season and add some olive oil.

Serve the mashed potato with the leeks and corn, and enjoy!
