Yeast (dry)

Step 1

For a focaccia for 5 people you’ll need: 5 ounces of warm water (10 ounces for 10 people, etc). Dilute ⅓ of the water in the yeast and let it rest for 10 minutes.

Sugar (granulated)

Step 2

In a large bowl, add the sugar and remaining water with the water and yeast mixture. Mix together.

Flour (all-purpose)

Step 3

Add the flour and salt (½ tablespoon for 5 people, 1 tablespoon for 10 people, etc) and mix.

Step 4

Either using a stand mixer or your hands, mix until a ball forms.

Olive oil

Step 5

Add ½ of the olive oil and incorporate it using your fingertips for 5-10 minutes until the dough no longer sticks to your fingers. Good luck!

Step 6

Generously coat another bowl with olive oil and add the dough. Cover with plastic wrap or a moist dish cloth and let rest for 3 hours in a warm place. (on top of the refrigerator, for example!)

Step 7

After 3 hours, mix again with your hands to remove the air bubbles that have formed.

Step 8

Generously oil an oven safe dish and spread the dough until it covers the base of the dish. Cover and let sit for an additional 2 hours.

Step 9

2 hours later, uncover the dough and make impressions using your finger tips. Evenly pour the remaining ½ of the olive oil.

Step 10

Add toppings of your choice! We suggest: rosemary, sage, tomatoes, olives, anchovies, etc. Don’t forget to add a pinch of sea salt.

Step 11

Bake 20-30 minutes at 200°C, until golden brown.

Step 12

Cut into small squares and serve with dip, olive oil or cheese for the perfect snack.

Step 13

It can also be used as sandwich bread or eaten on its own. The choices are endless!
