Skewers for dinner is the perfect Summer meal !
Make sure you have...
Skewers, Stovetop, Frying pan
Step 1
Wash & slice the zucchini into thick rounds.
Step 2
Peel & slice the onions into large pieces.
Step 3
Wash the bell peppers & cut around the seeds. Large dice them.
Step 4
If using, slice the lemons into rounds.
Step 5
Cut the chicken breast into cubes.
Step 6
Prepare the marinade. In a mixing bowl, combine : the teriyaki sauce & a good drizzle of olive oil. Season with salt & pepper. Divide the marinade into 2 bowls.
Step 7
In the first mixing bowl, add the chicken. In the second bowl, add the sliced veggies. Mix to coat & set aside in the fridge for 5 min.
Step 8
Add the veggies to half of the skewers,* leaving a few cm's on the bottom of each skewer. Repeat with the chicken on the remaining skewers. *Check out our tips for this step
Step 9
Heat a drizzle of olive oil in a pan (alternatively heat your grill) & add the skewers. Cook for about 12-15 min, rotating every few mins, until nicely coloured & cooked through. Serve with a side of yogurt sauce & a green salad. Enjoy !
If you're using wooden skewers, soak them in water for at least 30 min before grilling (to prevent them from burning)!
