Step 1
Cook the couscous according to package instructions.
Step 2
Meanwhile, peel & mince the garlic.
Step 3
Wash & finely chop the parsley.
Step 4
Prep the garlic butter. In a bowl, combine : softened butter*, minced garlic & half of the parsley until smooth. *Check out our tips for this step
Step 5
Season the steak all over with salt & pepper. Spread the garlic butter onto one side of the steak.
Step 6
Heat a grill pan over high heat. Add the corn & char on all sides, about 5-7 min.
Step 7
At the same time, add the steak to another grill pan, butter side down. Cook undisturbed, on medium-high heat, for about 3-4 min per side. Transfer to a cutting board to rest for a few min before slicing.
Step 8
Once the corn is cool to the touch, cut off the kernels.
Step 9
Fluff the cooked couscous. Add the corn & remaining parsley. Season with salt, pepper & a drizzle of olive oil. Mix it all together.
Step 10
Slice the steak.
Step 11
Serve the corn & couscous with the sliced steak. Add some fresh parsley, if you have some left & season to taste. Enjoy !
For room temperature butter, cut into small pieces or grate in a bowl 5-10 minutes before using !
