Summer skewers are made more fun with corn on the cob!
Make sure you have...
Stovetop, Frying pan
Step 1
Cut the chicken into cubes, approx. 2 cm.
Step 2
Wash the peppers & remove the seeds. Cut into 5 cm pieces.
Step 3
Wash & cut the zucchini into 2 cm thick rounds.
Step 4
Peel & cut the red onion into 2 cm pieces.
Step 5
Build the skewers alternating between the chicken & vegetables, leaving a few inches of space on each end. * *Check out our tips for this step
Step 6
Add skewers to a zip top bag. Add the Italian dressing to the bag & seal it shut. Mix the dressing into the skewers & let marinate in the refrigerator for 30 min.
Step 7
Meanwhile, if needed, shuck the corn.
Step 8
Heat a drizzle of oil in a grill pan over medium-high heat. Remove the skewers from the bag & place them on the grill pan. Cook for 10-12 min, rotating every few minutes to get nice grill marks.
Step 9
Season the skewers with salt & pepper. Once cooked through, remove them from the pan.
Step 10
Add another drizzle of oil to the pan & grill the corn on the cob for 3-4 min per side.
Step 11
Remove corn from the grill & top with butter. Serve alongside the chicken skewers & enjoy!
If you're using wooden skewers, soak them in water for 30 min before grilling (on a pan or the barbecue grill) to prevent them from burning.
