Step 1
Thinly slice the white and light-green parts of the leek (discarding the root and dark-green parts*) and rinse them well in a fine-mesh sieve under running water. *Check out our tips for this step
Step 2
Heat a drizzle of olive oil in a pan over medium-high heat. Add the leeks and the garlic (grated or finely minced) and sauté for 5 minutes.
Step 3
Cover the pan, lower the heat to low and let cook for 5 minutes, stirring occasionally.
Step 4
Meanwhile, thinly slice the avocado.
Step 5
After 5 minutes, add the spinach and cook, stirring frequently, for another 5 minutes.
Step 6
Form small holes in the spinach and leeks with a wooden spoon and break the eggs into the wells (1 egg per portion).
Step 7
Season with salt and pepper, cover and let cook gently until the eggs are done (about 5 minutes).
Step 8
When the eggs are done, add the sliced avocado, the crumbled feta and some fresh parsley leaves (optional).
Step 9
Season with salt and pepper to taste and it's ready!
For a zero-waste dish, use the discarded leek stalks to make soup ! Rinse well & remove all damaged, dry & yellow parts before adding to your pot with the ingredients of your choosing.
