Stovetop, Pot (small), Oven
Step 1
Preheat the oven to 200°C. Rinse the chickpeas under cold water.
Step 2
Add the chickpeas to an oven-proof dish & season with a good drizzle of olive oil, salt & pepper. Mix to coat & roast in the oven for 15 min at 200°C.
Step 3
Meanwhile, in a pot of salted boiling water, cook the quinoa according to package instructions. Once cooked through, drain & set aside.
Step 4
Rinse & finely chop the mint.
Step 5
Prepare the yogurt sauce. In a bowl, mix : the almond yogurt, grated garlic, lemon zest & juice, mint & a good drizzle of olive oil. Season with salt & pepper to taste.
Step 6
Peel & slice the avocado into quarters.
Step 7
Once crispy & golden, remove the chickpeas from the oven.
Step 8
Serve the quinoa & crispy chickpeas in a bowl. Season with cider vinegar & a good drizzle of olive oil. Stir to combine. Add the avocado slices & yogurt sauce & top with mint, if you have some left over.* Re-season to taste & enjoy ! *Check out our tips for this step
