A delicious and easy make-ahead meal that can be stored in the fridge for a few days!
Stovetop, Pot (small), Grater
Step 1
Cook the quinoa according to the instructions on the package (About 10-12 minutes in a pot of salted boiling water).
Step 2
Roughly chop the mint.
Step 3
Add the yogurt, a drizzle of olive oil, grated garlic, salt & pepper to a bowl. Add the lemon zest, lemon juice, chopped mint and mix together.
Step 4
Cut open the avocado and remove the pit. Remove the skin and cut it into quarters.
Step 5
Drain the quinoa and rinse it under cold water to cool.
Step 6
Mix the quinoa with the drained & rinsed chickpeas in a bowl. Add 1 tablespoon of both vinegar and olive oil per person. Season with salt & pepper and mix.
Step 7
To serve* : add the quinoa salad to a bowl, topped with the avocado and yogurt. Add some extra fresh mint and lemon zest. Season with salt & pepper to your taste. Enjoy! *Check out our tips for this step
For a truly flavoursome dish, we suggest adding cherry tomatoes, grated carrots & roasting the chickpeas with a drizzle of olive oil & a pinch of smoked paprika.
