Step 1

In a pot of salted boiling water, cook the green peas for 4-5 min. Drain & rinse under cold water.

Avocado

Step 2

Meanwhile, slice the avocados in half & scoop out the flesh.

Arugula
Garlic
Herbes de Provence

Step 3

In a blender or mixing bowl, add : the avocado, green peas, arugula, grated garlic, 'herbes de Provence', a drizzle of olive oil & 100 ml of water per serving. Season with salt & pepper. Blend until smooth. If needed, add extra water & blend until desired consistency.

Step 4

Serve the green pea, arugula & avocado gazpacho in a bowl. Top with some extra avocado & arugula,* if you have some left. Re-season to taste & enjoy ! *Check out our tips for this step
