Step 1

In a bowl, beat the eggs with some salt and pepper.

Avocado

Step 2

Halve the avocado lengthwise, scoop out the flesh with a spoon and thinly slice it.

Spinach (fresh)

Step 3

In a hot pan, add a drizzle of olive oil, then the spinach (reserve a handful for serving) and sauté for 3 minutes. Add the cooked spinach to the beaten egg.

Step 4

In the same pan, melt a dab of butter then pour in the egg-spinach mixture and cook for 6 minutes. (Tip: Cover the pan to speed up cooking.)

Spinach (fresh)

Step 5

Transfer the omelette to a plate and top with the remaining fresh spinach, crumbled feta, avocado and pesto. Fold in half and serve with any remaining fresh spinach on the side as a salad.
