Step 1

Preheat the oven to 220°C. Peel & thinly slice the onion.

Baby potatoes

Step 2

Clean & halve the potatoes.

Black olives (pitted)

Step 3

Drain & roughly chop the olives.

Chicken thighs (bone-in, skin on)
Cherry tomatoes

Step 4

Line a sheet tray with parchment paper. Drizzle with olive oil. Add the chicken skin side up. Add potatoes in the empty spaces around the tray, along with tomatoes, onions, salt, pepper & a generous drizzle of olive oil over top. Roast in the oven at 220°C for 30 min or until cooked through.

Step 5

Remove the tray from the oven. Sprinkle with chopped olives & crumbled feta. Add a squeeze of lemon & serve garnished with fresh herbs if you wish ! Enjoy !
