Our famous chocolate mousses in a cemetery version for Halloween!

Stovetop, Pot (small), Electric hand mixer, Spatula
Step 1
Melt the chocolate (35g per person) in a bain-marie or in the microwave in a salad bowl. Mix. When the chocolate is well melted, remove it from the bain-marie.
Step 2
Add a pinch of fleur de sel and mix. Set aside and let cool.
Step 3
Separate the egg whites from the yolks.
Step 4
Beat the egg whites until they are firm.
Step 5
Add the egg yolks to your melted chocolate. Mix well to obtain a smooth and homogeneous mixture.
Step 6
Very delicately add the egg whites to the chocolate, using a spatula.
Step 7
Pour the mixture into individual cups or small ramekins. Refrigerate for at least an hour before serving.
Step 8
In the meantime, melt the rest of the chocolate (15g per person) in a bowl in a bain-marie or in the microwave. Open a freezer bag, then pour the melted chocolate into it. Close the bag carefully to form a pocket.
Step 9
Cut a corner of the bag using scissors (be careful of the size of the opening - not too big) and lightly press the bag to release the chocolate. Decorate the cat's tongues with the melted chocolate, then set them aside.
Step 10
Crush the chocolate cookies. Tip: place them in a freezer bag, close it by removing the air, then tap it with a rolling pin or a frying pan.
Step 11
Take the chocolate mousses out of the fridge and add a decorated cat's tongue biscuit per ramekin. Sprinkle with the crushed cookies & serve. Enjoy !
