Step 1
Heat a drizzle of olive oil in a pan over medium heat. Add the cooked shrimp and garlic (minced or grated).
Step 2
Cook for 4 minutes, stirring frequently.
Step 3
Cut the avocado into thin slices.
Step 4
Cut off the ends of the grapefruit, slice off the peel and white pith, then remove each section of pulp with a knife. If necessary, remove the seeds.
Step 5
Squeeze the juice from the remaining grapefruit into a small bowl.
Step 6
To make the dressing, mix the grapefruit juice with 1 tablespoon of extra-virgin olive oil per person, salt, and pepper. Mix well.
Step 7
Serve the salad with the avocado and grapefruit. Add the dressing and season with salt & pepper. Optional: Add some fresh cilantro. Enjoy!
