Goat's cheese
Chives (fresh)

Step 1

Prepare the tuna rillettes. In a bowl, combine : the tuna, goat's cheese & two thirds of the minced chives. Season with salt & pepper. Set aside.

Egg

Step 2

In a bowl, crack the eggs. Season with salt & pepper & whisk.

Step 3

Heat a drizzle of olive oil in a pan, over medium heat. Pour the eggs into the pan & cook for 3-4 min. Once the bottom of the omelettes is golden, remove form the heat onto a plate.

Arugula

Step 4

Add the tuna & goat's cheese rillettes on top of the omelette & roll it or fold it in half. Top with the remaining chives & serve with the arugula salad seasoned to taste. Enjoy !
