Gluten-free Pasta (long)

Step 1

In a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, drain the pasta. Set aside & keep warm.

Chicken breast

Step 2

Meanwhile, slice the chicken into strips.

Lemon

Step 3

Melt a dab of butter in a pan, over medium heat. Add the chicken, lemon juice & zest. Season with salt & pepper. Cook for 4-5 min, until lightly golden.

Heavy cream
Spinach (fresh)

Step 4

Lower the heat. Add the cream & spinach leaves. Stir & cook for 2-3 min, until the spinach is lightly wilted.

Parmesan (grated)

Step 5

Add the drained pasta & grated parmesan to the pan. Stir to coat.

Step 6

Serve the lemon chicken pasta in a plate. Top with extra grated parmesan & re-season to taste. Enjoy !
