Step 1
Preheat the oven to 180°C. Heat the milk in a saucepan or in the microwave for 2 mins. Once it is warm, add the honey & stir until it has dissolved.
Step 2
In a large bowl, whisk : the flour, sugar, baking soda, all-spice, a pinch of salt & half a teaspoon of powdered ginger and ground cinnamon, if you have some.
Step 3
Gradually stir in the milk with a whisk, until you have a smooth texture.
Step 4
Pour the batter into a cake tin (preferably) and bake for 40 minutes at 180°C.
Step 5
Once baked & golden on top, remove the gingerbread from the oven & leave to cool before slicing. Serve it with melted dark chocolate on top - mmmmm ! Enjoy !
If you wish to reduce sugar quantities, you can remove up to ⅓ of the sugar in this recipe without altering flavor.
